Organic Purple chicken stew

Ingredients:

2 organic chicken breasts

2 bay leaves

Pandan leaves

Himalayan salt

White pepper

Organic carrots

Yellow zucchini

Baby corn

2/3 cup of Rice mix (whole wheat rice,black rice,red rice..)

Preparation:

1-Slice chicken into small chunks

2-Bring chicken into a boil in1 Liter of water with bay leaves and white pepper.Skim the foam from the surface as it builds up.

3-Slice carrots,zucchini and baby corn

4-Add rice mix  while chicken is cooking

5-Add veggies with 1/2 tsp.

6-Leave covered on low fire until rice and vegetables are fully cooked.(1h30min)

Chicken will turn purple from natural rice colors.

Black and red rice are loaded with antioxidants,phytonutrients,phytochemical,vitamin E,protein and iron.

Tamarillo or tea tree tomatoes health benefits

Tamarillo are low in calories,they contain slightly more proteins than regular tomatoes.

They are rich in betacarotene and vitamin A as well as antioxidants which makes them cancer fighting fruits.

They have also the property of potentially reducing blood sugar due to their acidic content.

They are high in potassium which controls heart rate and blood pressure (100g fresh fruit has 7% of potassium).

You can enjoy them cooked or raw.

Preparation:

Peel the skin and scoop the interior to add in green salads ,smoothie and blend to prepare salsa ,jams and jellies.

I used them to prepare my Organic Fennel salad,check the recipe for more details.

Organic Hammour

Ingredients:

1 organic filet of organic Hammour fish

1 medium sized sweet potato

Dill

Organic Peanut oil

lemon juice

Himalayan salt

Put the Hammour fish in an aluminum foil with lemon juice and salt. Cook for 30 minutes at 150 C.

Slice and peel the sweet potato.

Add peanut oil in the baking pan and place the potato slices. Bake for 45 minutes at 175 C.

Add dill for garnish and serve.

Spelt pasta with white sauce

Ingredients:

25 g butter or vegan butter

25 g organic all purpose flour

500 ml organic milk or nut milk

Himalayan salt

White pepper

Place butter in heated pan and let it melt.

Add flour and cook for 1 minute.

Remove from heat and mix with milk and bring to a boil while constantly stirring.

Let simmer for 12 minutes.

Cook spelt pasta as indicated in the box.

Mix and serve.(You can also add some Parmesan cheese or Zucchini)

Enjoy!

Gluten free banana bread

     Ingredients:

  • 2 to 3 very ripe bananas, peeled
  • 1/3 cup melted butter or vegan butter
  • 1 teaspoon baking soda
  • Himalayan salt
  • 1/2 cup brown sugar
  • 1 large egg, beaten
  • 1 1/2 cups of gluten free flour

 Preheat the oven to 350°F (175°C), and butter your loaf pan.

In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the melted butter into the mashed bananas.

Mix in the baking soda and salt. Stir in the sugar, beaten egg then add the flour.

Pour the batter into your prepared loaf pan.

Bake for 50 minutes to 1 hour at 350°F (175°C).

Remove from oven and let cool in the pan for a few minutes.

Slice and serve with some raw honey or organic jam.

Skinnykc Apple pie

Pie Ingredients:

200 g organic Butter

400 g organic all purpose flour

salt

3/4 cup cold water

Mix butter and flour and add salt . Butter pieces should be present.

Make a hole in the middle and add water gradually until the dough forms.

Turn on to a floured board and roll the pastry into a long strip and fold it in three.

Half turn the pastry and use the rolling pin to roll i again into a strip and fold it in 3.

Place it in the fridge for 20 minutes and repeat that for 3 more times.
