Lentil Salad

Ingredients: (6 servings)

Green lentils (1 cup boiled)

1 cup Organic baby spinach

2 Organic tomatoes

150 g Organic Feta cheese

1 tsp Chia seeds

1 tbsp Pumpkin seeds

1/2 Organic cucumbers

1 tbsp Pines

4 Fresh basil leaves

Dressing:

2 tbsps goat yogurt

5 fresh basil leaves

1 tsp mustard seeds

1/2 tsp himalayan salt

1 lemon juiced

1 tbsp apple vinegar

2 tbsps water

3 tbsps olive oil

Mix all ingredients and serve this power salad for lunch or breakfast.
