white yams and chickpeas

White yam and chickpea salad

Ingredients:

2 boiled organic white yams cut into chunks

1 cup organic boiled chickpeas

1 grated organic carrot

1 tbsp cranberries

1/2 cup organic spinach leaves

1 tbsp pumpkin seeds

1/2 cup boiled quinoa

Mix all ingredients and serve you heart healthy salad for lunch or dinner with a balsamic vinaigrette dressing or my Basil dressing*.
