La Vague D’or Saint Tropez

La Vague D’or is a very nice five stars Michelin restaurant at Hotel La Residence de La Pinede in Saint Tropez. It is one of the fanciest dining experience I had. Each dish is presented very nicely as they turn simple ingredients such as asparagus and fennel into fancy bites. I ordered a garden salad with a fish tartare and I can assure you that every bite makes your palate travel to the four corners of the world. My salad was prepared with seasonal veggies,the ultimate secret to crunchiness.We also enjoyed cheese and lard crusts as an appetizer which I found very unique.Some meals come in two parts for your taste buds to experience all the flavors of the ingredients.

In a five course menu try to avoid bread or eat very little of it to enjoy all the appetizers offered between your meals. They even managed to prepare us a chocolate mousse instantly because we wanted a pure chocolate desert and it was not available in the menu. It was a very pleasant experience as we got to meet Arnaud Donckele the Chef behind all those incredible dishes. He is very friendly and was open to listen to my new suggestions to the healthy breakfast menu which consisted on adding baobab and maca powder to some dishes.
